Delicious Egg Muffins


  • 10-11 eggs (Makes about 12 muffins)

  • Bacon or breakfast sausage, cooked and diced

  • Extra sharp cheddar cheese

  • Sweet onion (diced)

  • Green and red bell pepper (diced)

  • mushrooms (diced), optional

  • tomatoes (diced)

  • Spinach, optional

  • non stick spray (I use canola)

  • Morton's Nature Season (or salt and pepper)

  • Your favorite muffin pan


  1. Preheat the oven to 400 degrees.

  2. Spray muffin pan with non stick spray

  3. Dice your veggies! set aside.

  4. crack your eggs into one bowl.

  5. Season your egg mixture and whisk them until fully combined

  6. Now it’s time to build your muffins! Fill each muffin tray almost half way with egg mixture

  7. Add your goodies: (fun combinations like mushrooms, spinach, onion tomato and cheese) (cheese, tomato, onion, peppers, bacon or sausage) into the eggs.) (onion, sausage, peppers and cheese)

  8. Baked 10-15 minutes or until muffins are done, cheesy and perfect!
